Prepared with a Stoneware Covered Square Casserole
Preheat oven to 350°F.
Preparation: 1 hour
Cooking: 25 minutes
1. Rub pork chops evenly with olive oil, dry seasonings and 1⁄2 tsp salt. Let stand 1 hour.
2. Combine plantains, butter, honey and remaining salt. Spread evenly in the bottom of a baking dish. Bake plantains at 350°F for 20 minutes or until tender and brown, turning once.
3. While plantains bake, preheat grill pan to high heat. Once hot, place the pork on the grill and cook 4 minutes per side or until done.
4. Plate pork chops and serve with the honey-glazed plantains.
