Everyone remembers their first oyster – it might have been on vacation or at a neighbourhood oyster bar.

While oysters can seem intimidating or temperamental, it is possible (and easy!) to recreate the experience in your home.

WHAT TO SERVE

Typically, oysters are served with lemon wedges, freshly grated horseradish, hot sauce or cocktail sauce. You can also serve them with the French-bistro classic, mignonette or incorporate any fresh, zesty or spicy ingredients to make your own cocktail sauce.


Classic Mignonette

For 24 oysters

  • 4 oz red wine vinegar
  • 2 shallots, peeled and finely chopped
  • 1 Tbsp freshly cracked black pepper

Combine all ingredients and prepare one hour prior to serving.

Asian-inspired cocktail sauce

For 24 oysters

  • 1 tbsp fresh ginger, grated
  • 1 small garlic clove, finely diced
  • 1 tsp chilli flakes
  • 1 tsp sesame oil
  • 2 tbsp extra-virgin olive oil
  • Juice of 1 fresh lime

Combine all ingredients and prepare one hour prior to serving.

  • 2 tbsp fish sauce
  • 1 tsp honey
  • 1 tbsp soy sauce
  • 1 tbsp chopped green onion
  • 1 tbsp chopped fresh cilantro

Tips to keep in mind when buying and serving oysters :


Encourage your guests to try their first oyster without any condiments or garnishes to better distinguish their unique flavour profiles.



If you are buying your oysters ahead of time, store them on ice, unopened. Never seal them in a tight container and never keep them immersed in water or left in melted ice.



Chewing is encouraged! Take 2-3 bites of each oyster before swallowing.



Lay your oysters on a bed of ice and cover with a damp towel. Oysters can be stored this way for 2 days.
