1 1/4 cups white sugar

2 eggs

1 tsp. vanilla

1 tsp. instant espresso or coffee, dissolved in 1 tsp. water

1 cup all-purpose flour

1/2 cup cocoa powder

1/3 cup semi sweet chocolate chips/pieces

1/4 tsp. baking powder

INSTRUCTIONS

Preheat the oven to 350 F.

In a large bowl, combine butter and sugar. Whisk or beat until combined and smooth. Add eggs, one at a time, incorporating each fully. Add vanilla and coffee and whisk to combine.

In a second bowl, combine the remainder of the dry ingredients. Add dry ingredients to the wet and stir with a spoon or spatula until you can no longer see streaks of flour. Add chocolate piece and mix.

Spoon the batter into the star shaped pan and bake for 12-15 minutes.

Cool and serve with ice cream.
